Why Us?

Thank you for visiting our online store! At Ryan Creek Root Cellar the majority of our specialty products are manufactured under the inspection of California Department of Food and Agriculture, and are therefore only available at our tasting room: The Boardroom and here online (in the State of CA). Our facility has recently received USDA approval for our dry-cured, smoked bacon and dry-cured pork jowl (guanciale) meaning that we can sell interstate, as well as wholesale. We are looking forward to being able to offer more interstate products in the very near future. All of the meats we use are sourced nearby, and we work with local farmers on special products.

As a note: We do not preslice any of our products due to issues with oxidation. In order to combat oxidation, we vacuum pack or wrap whole cuts of meat in selectively permeable papers or barrier bags to assure the best quality.

Ryan Creek Root Cellar is a very small cured and smoked meat manufacturer in remote Humboldt County, California. Our name comes from Ryan Creek, a waterway with historical significance to the growth of our area. The "Root Cellar" references the temperate climate of Eureka, which is perfect for traditional dry-curing. 

Additionally, we are part of the Redwood Acres State Fairgrounds food incubator with over 20 artisans working together to keep the budget-slashed fairgrounds afloat. We hope to excite and educate folks about this ancient craft, and if you're in the area, come visit us at The Boardroom!

Location

Our products can be purchased at The Boardroom, as part of a charcuterie board or to go from the deli case. Also they are available seasonally at local farmers markets. Stay tuned for other retail establishments to find our products...
